Sixty people lost their jobs last week when the North Killinghome-based Clark Construction closed down without any prior warning.
The wintry weather in December caused a delay to the project, pushing the expected finish date to the end of this month.
The Iron were told last week that it would be completed within a fortnight, and the club are now hoping to complete it by working directly with Clark's sub-contractors.
Workers were on site on Tuesday, with the club conceding work had "slowed down" due to the disruption.
The development is at the corner between the Scunthorpe Telegraph Stand and the away end.
A TV studio has been built, the executive area will triple in size and a licensed bar will be available in the stand for the first time. It was originally due to be open to supporters by the end of February.
